My first day back to work was rough. Physically and emotionally. My body was conditioned to take it slow during the stay-at-home period, so the normal rushed activities typical of my working mornings resulted in, what I would imagine, moments of hot flashes. My beloved furbaby Skye celebrated her 12th birthday last week. My daughter and I made her a canine cake. Which was really just meatloaf, baked in a mini cake pan, and frosted with cheesy mashed potatoes. She loved it! As you can see in the photo there, she couldn't wait to get a bite. She was supposed to sample the little slice, which I kept pointing out to her, but she went for the big piece aka the entire cake instead. Lol! Good thing we added chopped veggies in the cake. Schools will reopen in about two weeks in our district. Needless to say, I'm anxious. It's true that the number of Covid-19 cases in our county is low compared to the shocking numbers we see in some of the hotbeds around the country. But there are still new cases reported daily. More importantly, the transmission rate here in NJ is currently above 1. Which means that the virus is still expanding. In an effort to encourage my family to eat more fruits, I sometimes resort to making them a big fruit platter, like this one below. I was hoping that it would entice them to snack off that fruit platter, instead of reaching into the cookie jar. It seems like a good idea, doesn't it?
