Hey, Fiesta Friends! Sorry, I didn’t have the chance to reply to your comments last week, but I do have a good excuse. I had to undergo a minor surgical procedure that required me to rest afterward. Everything is a-ok and I’m back on my feet, yay! For a while, though, the husband was responsible for the food situation at home. His response to that was typical. So, I had a momentary memory lapse last week. Or more precisely, I had what you would consider a senior moment. There is no such thing as a small-batch lasagna, is there? When you make lasagna you gotta commit. Including the possibility of it bubbling over. Clever cooks would have used a sheet pan underneath the lasagna to catch the spill, but the author of this blog aka I/Ik/Ich/Je/Yo is rarely clever. Now I'll have to spend time cleaning the oven!?
