Summer is officially here and the deck/patio is officially open. Alfresco dining is starting to be the norm around here. Somehow food tastes much better eaten outdoors, even if it's just simple sandwiches and salad. And ever since the husband put up the outdoor string lights we tend to linger outside a little longer. School is out, you guys! How should we celebrate? With a pizza? A cake? A cake and a pizza? Oh, I know! Tempura! Right?! No? C'mon, tempura is special, especially homemade tempura. For the past several years, I’ve always made Croque Madame on Father’s Day. It's for my husband, not my dad (RIP). The husband loves anything with fried eggs. The Croque Madame is my little contribution for the day. The rest is up to the big guy himself and the kids. In most years, he would want an all-you-can-eat buffet dinner. That wasn’t much of a Memorial Day weekend, was it? At least not in my neck of the woods. It was very cold and very wet. Unseasonably and unreasonably so. Darn the weather! Always ruining our plan, which was to spend the weekend at the beach. We did go out to eat twice, though, which was not only fulfilling physically but mentally as well. Good news, peeps! The official grilling season has finally begun. Happy Memorial Day Weekend! Don’t you just love it when you can take the cooking outdoors? It means less mess to clean up in the kitchen, less offensive odor to worry about in the house, and best of all...for me, just less to do. Period.
