Happy 4th, everyone! (one day late 😴) I'm still recovering from last night, so this will be brief. Let’s just say I had too much food & beverage and too much fun! My contribution to the festivities was these barbecued tofu skewers. Pretty easy to make - just tofu cubes slathered in barbecue sauce and air fried. They're really good!! I hope everyone had a great day! Now, This! Beach Jello Cups Chicken Tinga Tostadas Delicious Chicken Pilaf Strawberry Rhubarb Hand Pies *** Now, ... continue reading...

It’s time to start thinking about red, white, and blue food, you guys! The 4th of July is less than a week away! I bought several bags of red, white, and blue potatoes that were just begging to be turned into gnocchi. So I obliged. The truth is, however, these new potatoes are not that conducive to being made into great gnocchi because of their high water content. Look at the fabulous end-of-school-year gift I received! It was made and given to me by the two best teachers ever! The gifts I usually get don't seem to have much thought put into them, and hey, I'll admit I’m guilty of doing the same thing many times. But these two teachers I had the pleasure of assisting this year are of a whole different caliber. They're incredibly thoughtful and kind. A few months back, they gave me another customized FiestaFriday item for my birthday. Check it ... continue reading...

Focaccia or pizza? Or flatbread? Are they all essentially the same, anyway?! Why are decisions so hard to make?! But we don’t have to choose one or the other, do we? We can have them all. And so I did. I had them all. I used this shockingly easy no-knead focaccia recipe as my guide, sort of, then split the dough to make a focaccia and a half-and-half pizza. Who says you can’t have your cake and eat it too, ha! Features! Summer Stone Fruit and Burrata Salad Mini Victoria Sponge Cakes ... continue reading...
Fiesta Friday #540

It used to be Old Country Buffet or Golden Corral but since neither restaurant in our area survived the Covid pandemic, we will have to travel at least 45 minutes to go to the nearest one. So he's been threatening he wants to try out a ... continue reading...
