Rainbow Pizza with Kale Parmesan Crust

Rainbow pizza (vegetarian) loaded with nutritious and delicious vegetables AND kale in the crust! And kids love it!

Rainbow Pizza

My baby girl showed me a picture of a rainbow pizza she found on Tumblr, a while ago. She asked me to make her one. But I was really dragging my feet about it, not wanting to think too hard about what ingredients I would have to search to satisfy ROY G. BIV. In case you didn’t know, thinking too hard hurts my brain. What does that tell you about my brain capacity? The answer: it’s low.

And then, we were driving somewhere, and all of a sudden, out of nowhere, a rainbow popped. Yeah, just like that, POPPED! It looked kinda like this.

And then, I was digging somewhere in the garden, and all of a sudden, out of nowhere, these purple potatoes popped. Seriously! I didn’t plant them. At least not this year. What does that say about my potato-digging skill? The answer: not that great.

They obviously came back from tubers that I had left in the ground the previous year. No complaint, free food is always appreciated.

And then, I came home from work and my mother, who happens to be visiting, served me this beautiful salad. What does that say about my mother? The answer: she is awesome, my mother.

I took it that these were signs that I should make the rainbow pizza. If my mom could make that rainbow salad for her baby girl, I certainly should at least make an effort to make my baby girl her rainbow pizza. Don’t you agree? The answer: YES!

So, baby girl, this is for you! By the way, how did you grow so fast? Can I still call you “baby” next year, when for sure you’ll be taller than me? Maybe I should stop feeding you, so you won’t grow anymore. Just kidding, obviously! I hope you like this!

Rainbow pizza (vegetarian) loaded with nutritious and delicious vegetables AND kale in the crust! And kids love it!

Ingredients
For the crust
  • 1 package (23 oz.) ready-made pizza dough
  • 1 cup cooked kale leaves, finely chopped
  • ½ cup shredded Parmesan cheese
For the toppings
  • R (Red) - Cherry tomatoes, chopped
  • O (Orange) - Bell pepper, diced
  • Y (Yellow) - Bell pepper, diced
  • G (Green) - Broccoli, chopped
  • B (Blue) - Purple Cabbage, chopped & steamed
  • I (indigo) - Purple Japanese eggplant or purple potatoes, diced
  • V (Violet) - Red Onion, diced
  • Pizza or Tomato sauce
  • Shredded Mozzarella cheese
  • Shredded Provolone Cheese
Instructions
For the crust
  1. Squeeze any liquid out of kale leaves, by using a potato ricer or a tea towel. They must be completely dry.
  2. Stretch pizza dough into a rectangle about ½-inch thick.
  3. Sprinkle chopped kale leaves and Parmesan cheese.
  4. Roll dough jelly roll style. Then cut into thirds.
  5. Shape each third portion into the shape of a rainbow.
  6. Makes 3 small pizza, about 4 x 10 inches.
To make the pizza
  1. Spread pizza/tomato sauce on rainbow-shaped pizza crust.
  2. Sprinkle the cheeses.
  3. Lay vegetables on top of the cheese in the order of the colors of a rainbow (ROYGBIV).
  4. Bake in a pre-heated oven at 450°F, for 15 minutes.

      So great to hear, Indira! I have to say that making that pizza made me happy, too. It was so gratifying to see the look in my baby’s face. As well as hubby’s and son’s, by the way. They were like….what the…., but they asked for prosciutto added to their pizza, so I made the third with it, but I didn’t line up the colors, just sort of sprinkle pell mell. It still looked pretty! I hooe you’ll give it a try, hon! <3

    Oh my Angie, you’ve outdone yourself, this is absolutely striking, look at all those rainbow colors, I would not want to eat this or let anyone eat it for that matter.         So I have a question Angie……when I go to your page to see all the entries with the “real” names on them, I don’t see all of them, just a handful on your page. However, when I go to the InLinkz site, there are so many more on there, but they haven’t appeared on your page yet. I keep refreshing, but to no avail. I don’t like to follow the InLinkz as much, as they don’t have the proper names on there, just the name of the dish. Any ideas?

    Angie, oh how I love your rainbow pizza. It’s filled with so many superfoods and such colorful vegetables. And you worked miracles with that purple cabbage. Whenever I attempt to cook with them, the color loses it’s vibrancy and spreads to other veggies, leaving me with a mess. lol. Thank you so much for sharing this pizza recipe with us. I can imagine just how much fun it would be to eat this. So many different flavors in each bite. =)

      The trick is to not overcook, and use very little liquid. In a stir-fry, I usually add it last to minimize spreading of the color.

      Yup, that pizza was quite delicious, even though I would consider it a healthy food. Now, that’s a winning combination, isn’t it? Healthy yet delicious. Enjoying co-hosting much? 🙂

    We all need to be inspired in some random intervals of our life. Yours came at an alarming speed… and you grabbed at it, and made such incredible looking pizzas with it! I am so enamoured by all those colours. I’m sure my child would be hopping and skipping with delight if I ever made such an attractive dinner for her.

      Thanks, Petra! You really should try the pizza, and especially the crust. So good! Your tofu dish deserved the feature, it’s not your run of the mill stir fried tofu, is it? It’s such a unique dish! I bought this package of tofu strands today, looks like noodles. Have no idea what to do with it, will peruse your recipe and see if inspiration hits. 🙂
