Feliz Cinco de Mayo! In honor of the special day, I'll be serving Mexican food tonight. Most likely Barbacoa. Though it seems we have Barbacoa at least every other week, but who's complaining?! Every time I see jumbo shrimp on sale, I feel compelled to buy. Because. Jumbo. Shrimp. Major mass appeals there, right?! Consequently, there are now several packages of jumbo shrimp in the freezer. It's all about the plants right now; that's where my focus is. I'm racing against the weather to try to finish the weeding, the cleaning, the mulching, the digging, the planting, the transplanting... and so on and so forth. My Easter break is pretty much over... sigh... sob... Oh, well, at least there's still today (Fri-yay!) and the weekend. But then, it'll truly be over! So sad... Why can't we have year-long breaks?
