It's a McDonald's day... Not! We do actually patronize McDonald's every now and then, but this meal is not from them. Because first of all it's homemade... using vegan meat! It's Shakshuka time! Or in this case, it's really Uova in Purgatorio (Eggs in Purgatory) based on the herbs and seasonings I used. Shakshuka... Uova in Purgatorio... same difference... In any case, it's a perfectly easy-to-make, simple meal that satisfies everyone in my family, meat and non-meat eaters alike. I'm addicted to the Passion Fruit Mojito from The Cheesecake Factory. So refreshing! My favorite used to be the Matcha Mojito. Now it's been replaced by the Passion Fruit one. Inspired by my vegan wannabe daughter, I've been eating a lot more plant-based foods recently. Some of the things I tried are pretty good actually. Namely, this vegan burger. And this vegan wrap.
