Fiesta Friday #529

And just like that, we’re now onto Easter! It’s arguably my favorite holiday because it usually signals the arrival of Spring, which in turn means the appearance of fragrant flowers, fresh greenery, and good weather (most of the time).

Also, and this is a big deal, it means it’s time to load up on Hot Cross Buns!

Those buns look pretty good, don’t they? But that’s an old photo from a few years ago.

I just made a fresh batch, though. Here they are…

Still waiting to get blessed with their crosses. I will be using piped icing for the crosses so they need to cool down first.

Can’t wait to tear into one. They’re stuffed with cream cheese! Not traditional, I know, but hey, they’re MY Hot Cross Buns 😊

Features!

Crispy Korean beef Tacos

“I love fusion food. You get the best of two (or more) worlds. These Crispy Korean Tacos combine two of my favorite cuisines – it’s a definite Must-Try for me!” — Angie

Mushroom Koftas in an Eggplant Yogurt sauce

“Anything with eggplant is a winner for me.” — Jhuls

Fruit Salad Cheesecake

“Such a pretty looking cheesecake!” — Jhuls

Corned Beef Hash Recipe

“Suddenly, I am having a corned beef craving! Yum!” — Jhuls

Love to see your filled Hot Cross Buns! My family doesn’t really like the traditional ones either ~ those are just really dough with raisins. So, I make my yeast Cinnamon Buns that they like, but instead of the frosting, I do an Apricot Glaze on top and then the frosting X (I posted those). Your tacos look great too! Happy Spring!

Who’s ready for Cinco de Mayo?! I am! 🙋🏻‍♀️ May I suggest celebrating it with this Pineapple Margarita Chicken Quesadilla? You gotta make that Pineapple Margarita first, though. Coz that’s the marinade for the chicken! As if I need to twist any arms. 🤣 The more margarita, the merrier, says people everywhere. 🍸🥳 Link in bio!
