Fiesta Friday #528

Happy early St. Patrick’s Day, Fiesta friends!

St. Patrick's Day Corned Beef with Colcannon | FiestaFriday.net

Our annual corned beef & colcannon meal came early this year. We had it last night since we’ll be away on a mini adventure this weekend. We want to check out the American Dream Mall/Amusement Park.

And because the decision was made rather hastily and quickly, we were unable to get our trusted pet/house sitter to watch Skye on such short notice. So she’s coming with! It’ll be an interesting adventure, that’s for sure 😂

I’m not so into rides or roller coasters – been there done that when I was a youngin’. I’m mostly interested in trying out the food options. There seems to be a good variety, so it’ll be a fun experience!

Okie dokie, I shall “see” you all next week! Have a fabulous St. Patrick’s Day weekend, and don’t get into too many shenanigans!

It’s Features Time!

Pistachio Lush Dessert

Spring Crudite Platter

Persian Rice Flour Cookies (Nan-e Berenji)

Peanut Butter Swirl Bars

Who’s ready for Cinco de Mayo?! I am! 🙋🏻‍♀️ May I suggest celebrating it with this Pineapple Margarita Chicken Quesadilla? You gotta make that Pineapple Margarita first, though. Coz that’s the marinade for the chicken! As if I need to twist any arms. 🤣 The more margarita, the merrier, says people everywhere. 🍸🥳 Link in bio!
