Grilled corn is a summer ritual! That’s my proclamation of the day. It probably is for most people anyway. If not, it ought to be.
Coz who can resist this, seriously?!
Grill the corn on high heat for 15 minutes, turning often, until charred and blistered here and there. Then slather with butter while still hot. There’s no need to melt the butter.
Now the corn is a blank canvas to all your grilled corn desires. Mine happens to be lime juice, salt, crispy garlic, crumbled feta… and… as if all of that’s not enough… a generous sprinkling of Tajin seasoning. Perfectamundo!
I don’t know of any better summer snack! That’s my second proclamation of the day. Though the husband might challenge me on that and offer up danger dogs for consideration. To that, I’ll say…Nah…
