Fiesta Friday #383

That wasn’t much of a Memorial Day weekend, was it? At least not in my neck of the woods. It was very cold and very wet. Unseasonably and unreasonably so. Darn the weather! Always ruining our plan, which was to spend the weekend at the beach.

We did go out to eat twice, though, which was not only fulfilling physically but mentally as well. It was great to see that things are starting to normalize around us. That was the first time we had gone out to eat in a restaurant in more than a year!

By Monday, the weather had cooperated, and we ended up on the newly installed patio. Grilled Chicken Fajita was on the menu.

    Well, our weather wasn’t too great, either. But I got together with a few friends I hadn’t seen in a long time that Sunday – for which I made the above stuffed mushrooms – we were together on a cold drizzly Sunday, so we had to stay indoors and not grill, but it was a great and tasty occasion. Simply just feeling good getting OUT again!

    Thank you so much for featuring me Angie. I am glad you have a new patio to enjoy Memorial Day, and that meal look fabulous. You could definitely count me in as a guest! I know you are in count down till the end of the year, it’s been a difficult two years for teachers and you definitely deserve your summer off. I look forward to cohosting this week.

      I really love your roasted chicken recipe. The picture looks tantalizing! Yeah, it’s been a difficult year so say the least, for both the teachers/staff and the students, the latter probably even more affected.     I’m here for the party! Sorry I can’t get Gretchen Wilson out of my head! Anyway this week I brought some of my families favorites, ORANGE CHILE CHICKEN, PANS SEARED CHICKEN with RUSTIC TOMATO GRAVY & FLUFFY BUTTERED MASHED POTATOES and NOT YOUR GRANDMOTHER’S CHICKEN PARMESAN. I hope you have a WONDERFUL weekend

    We tried to go to a park during the weekend, but OMG it was so hot! We stayed only for less than 10 minutes. Anyway, the pina colada and chicken fajita sound delish, Angie! Happy Fiesta Friday!

      Lol, it reminds of the time my family and I went to Chincoteague (an island near Virginia). It was not just hot, but there were literally thousands of mosquitoes. Within minutes of being outside, we ran back into our car with tails between our legs. Hot + mosquitoes are just the worst! Hope the weather improves, Jhuls. It’s been hot here, too.
