Fiesta Friday #338

I heard through the grapevine there’s such a thing as cucumber blindness. Now I know it’s real. I’m afflicted with it.

How else can you explain those overgrown cucumbers that I always miss every time I harvest my cucumbers?! Eventually, I do see them, but only after they’ve grown yellow and the size of an elephant’s trunk. Well, approximately… give or take a few inches… Okay, obviously I’m exaggerating.

The more important point is, what do you do with these oversized cucumbers? Besides throwing them into the compost bin?

    I am surprised to see my Pastel Buns with Yema Filling – thank you, Angie!! As to the cucumbers, can they be used for salad? Or pickles??? I only use cucumbers as side dish or as a salad or add to my water, although I haven’t used cucumbers as huge as elephant’s trunk.?

    This year I have vowed to not let my cucumbers overgrow—I am searching through the plants every morning hunting them down…so far so good. Last year I had mammoth surprises every week and made Cucumber Kimchi or just juiced them with watermelon etc and a touch or lime. Thanks so much for featuring the Nasturtium Vinegar…so simple no?

      Ooh…cucumber kimchi sounds good! I suppose it’ll work if I remove the seeds and skin. A friend from work suggested frying them, which sounds interesting but I can’t imagine what the texture is going to be. Anything fried should be crispy, right? But fried cucumbers?

        I am not sure I can stand behind fried cucumbers (?) especially the overripe ones but it doesn’t hurt to experiment- let me know how it turns out

    Oh my gosh, I’d be happy for anything in my garden! I carefully fenced with chicken wire and chipmunks ate my parsley and lettuce, then tomato/corn caterpillars infested every thing and now the latest, the parsley I keep up near my house was eaten by a swallowtail caterpillar. My roses have aphids, other plants have beetles and my hummingbird feeder is overrun by ants and it’s all a disaster! I do NOT know what the heck is going on. Conspiracy? Apocalypse? Global Warming? Attack of the Pests?

    And ya’ll know if you look at my posts how much I love my parsley!!

    But I also love hosting! So see you all soon!!

      Actually, similar experience here with the critters, which is so frustrating. Luckily, the cucumbers and tomatoes seem to escape their attention this time, but who knows for how much longer. I’m turning my vegetable garden into a perennial flower garden next year! It’ll be low maintenance that way. I’ll get bonus flowers for arrangements, too. Thanks for cohosting, Mollie! ?

    Ha ha cucumber blindness! I keep finding whole courgettes hidden under leaves and they are massive! Am glad I am not the only one and now I have a name for it! 🙂
    I love Chinese smashed cucumbers with garlic, chilli, and sesame oil! I am pretty sure I could go on a diet if that dish was involved!

      Chinese smashed cucumbers sound delish, Petra. I’ll give it a try. Yesterday I found more overgrown cucumbers with one already turning completely orange, looking like a melon! Found huge round zucchini, too. I guess there’s zucchini blindness, too, lol.
