Fiesta Friday #212

Sometime this week it hovered close to 80 degrees. I ditched my boots and opted for the brand stinking new Cole Haan. Peep-toe low heels.

Bad decision. They pinched my feet.

Still, I walked the whole day in them, at work and after work. Bad decision! My feet were in throbbing pain later that night.

Anyway, while at the store trying to decide what to cook for dinner and ignoring the pain, I saw that round roasts were on sale. Dirt cheap! I wasn’t in the mood for roast beef, but with a price that low and a pain that high, my dinner was quickly decided.


Good decision! Things were starting to turn around.

At home, I continued making good decisions. I put the Cole Haan back in their box and placed it on the highest shelf in the closet, then…I did NOT turn on the oven.

I used the Instant Pot, instead, to cook the roast, because… who would want a hot kitchen on a hot day?!

But mainly because Mollie told me to. You should know by now it’d do you no good to second guess her.

Besides, I needed to get off my feet as quickly as possible. I didn’t need to toil in the kitchen any longer than necessary.

Missing the crisp brown crust of the oven roasted beef, the Instant Pot roast didn’t look as handsome, but otherwise it was easy, quick, and delicious.

Especially when turned into these hot sandwiches.

    I just choked on my beverage when I read this!! What a hoot! And no, there are no crusty parts. But that sandwich, omg!! I didn’t see the “inside” of the roast – hope it turned out like you expected!! Great feature pics! I almost had to make those tacos in the middle of the night when I couldn’t sleep, they look insanely good!!

      Sorry, wasn’t trying to choke you ? The roast was great, tasted a lot like the fresh roast beef (not the deli) that I get from my grocery store. A little more done than what I prefer, but that was because I set it at 6 mins, it was a slightly bigger piece. Next time I’ll do exactly 4 mins. Btw, also made Pernil! I marinated it slightly differently but it was a hit!

      I’m starting to believe the Instant Pot is a great investment. I tend to buy too many kitchen gadgets and appliances that end up not being used, but I’ve been pleasantly surprised by IP’s usefulness. Thanks for cohosting, Antonia! ?

      That’s about the only drawback, but hey, some days you just can’t deal with an oven ? Your bundt cake looks amazing. I LOVE cornbread of any kind!

    I can relate to this today. I am not really a fan of shoes and I love sandals (?) like Birkenstock. But I decided to wear shoes today and I was full of regrets after an hour of walking. I still survived throughout the day, though. ? Those sandwiches look really awesome. I’d like to have one or two after a tiring day. And are those pickled jalapeños?? Wowza!!       Do you know I’ve never worn Birkenstocks?! I do love my summer flip flops, though. If I can sleep in them, I would ? Those are candied jalapeños. I’ve lost the ability to handle hot spicy foods, so annoying! I’m trying to train myself again slowly, therefore the candied jalapeños.

    Joining in a little late this week as I’ve been shopping in IKEA most of the day today, with the kids and our guide dog puppy, not making very good decisions for myself (unlike you!) and eating greasy food in the cafeteria. They have this trendy sounding beetroot and brie tart, which I was completely fooled by – it’s very greasy, not trendy and I couldn’t see any beetroot in it. Don’t order it if you ever eat in IKEA. Better to go for the proper greasy stuff, like the meatballs, at least they don’t pretend to be something they are not. Have a good weekend:)

      That sounds really good, though, the tart. Maybe you can come up with a recipe of your own? I happen to have beets and Brie right now, what are the odds. I love Ikea, too, for the cool furniture more than the food, but I’ll gladly sit for the meatballs and the princess cake.

      Thanks, Lily! The roast was easy peasy, trust me. I still prefer oven-roasted honestly but it’s great to have these quick recipes in your repertoire for those busy or hot days. Enjoy the fiesta!

      They felt comfortable when I tried them in the store. Maybe they need breaking in or my feet have expanded ? The sandwiches were good!

      It was just a fluke, it’s back to rainy and gray and cold. In other words, it’s still winter, surprise ? Glad you like the sandwiches; they were quite delicious. Enjoy the fiesta!

    we reached 82 degrees in Connecticut the other day. It was amazing. And then it snowed.

      It pretty much went the same way here, minus the snow. Love those sandwiches, best of all it was easy and quick, just follow Mollie’s instructions. 4 mins in Instant Pot!
