It's Shakshuka time! Or in this case, it's really Uova in Purgatorio (Eggs in Purgatory) based on the herbs and seasonings I used. Shakshuka... Uova in Purgatorio... same difference... In any case, it's a perfectly easy-to-make, simple meal that satisfies everyone in my family, meat and non-meat eaters alike. Inspired by my vegan wannabe daughter, I've been eating a lot more plant-based foods recently. Some of the things I tried are pretty good actually. Namely, this vegan burger. And this vegan wrap. I just have to show you my plants, you guys! Especially my herbs. And also the chili peppers. Don't they look amazing? Somehow with all the heat and humidity as well as my traveling, these plants continue to flourish. Even though they're growing in pots. My big salad platter is getting a lot of use these days, in and outdoors. This was last night's dinner. When the weather is too hot... or you're still recovering from an illness... and the idea of cooking is too much, a salad platter is the only way to go.
