A lot of feasting is happening this week! February has all the holidays, it seems, squeezed into one week. It started with the Lunar New Year last Saturday, followed by the Super Bowl (which should be a national holiday, shouldn't it? Or at least the day after it), then Fat Tuesday, Valentine's Day, and… the day after Valentine's Day 😂 There's always an excuse to overindulge! I’m definitely blaming the husband for this. Anyway… after all the eating that's been going on, I'm happy Lent is here! ... continue reading...

There are two very specific dishes that I want to eat tomorrow. Yusheng aka Prosperity Salad and dumplings. Why? Because tomorrow is not just another Saturday. Fiesta Friday #520
Here’s a great dish that both vegans and non-vegans would go crazy for. I know because my daughter, who is vegan, and I, non-vegan, both LOVE it! It's kimchi fried rice, of course. So flavorful you won't miss the meat or eggs typically added to fried rice. I love adding tofu scramble or even cooked lentils along with several kinds of grains and vegetables here for a full meal that satisfies my daily nutritional requirements. Healthy protein? Check. Whole grains? Check. Vegetables? Check ... continue reading...
