Happy Fiesta Friday, everyone!
Once again we’ve decided to go away for the weekend so we had our Easter ham early.
It was going to be a low-key affair for just the husband and me, anyway, so it was a simple meal of baked ham with roasted baby potatoes. There were some glazed baby carrots, but that’s pretty much it. The son did eventually join us but even with an extra mouth to feed, I still had a lot of ham left over.
If you have any ideas about what’s the best thing to do with leftover ham, I’m all ears.
In the meantime, I wish you all a fantabulous, awesome wonder, perfectamundo Easter!
