Fiesta Friday #521

I’m so looking forward to next week when January will finally be over. It’s always the toughest month to get through, don’t you agree?

We’ve had school closings aka snow days, as well as delayed openings, and even on days when it’s safe to go to school, we’ve had to have indoor recess, which is not ideal when there are 20 kids in a small classroom.

To make things worse, for me and my family, there was also a lengthy power outage, and some of our backyard stuff got blown away. So, it’s safe to say that it’s been a very long month.

But, I’m excited and happy we’ll be welcoming February very soon. The daylight is getting longer every day and guess what?! We’ll be celebrating Lunar New Year and Valentine’s Day. Hurray!

I’ll have a legitimate excuse to eat lots of dumplings, egg rolls, and chocolate! Despite my protestations, the hubs always gets me flowers and chocolate for ❤️ day. In return, I will make him my special ❤️ pretzels.

Who’s ready for Cinco de Mayo?! I am! 🙋🏻‍♀️ May I suggest celebrating it with this Pineapple Margarita Chicken Quesadilla? You gotta make that Pineapple Margarita first, though.
