Happy St. Patrick’s Day, Fiesta Friends!
After a blustery couple of days, it’s finally warm enough to want to ditch your coat, kinda sorta. It’s not shorts or skirts weather yet and the sun may be a little shy today, but it should still be nice enough for an impromptu al fresco dining.
And that’s why the husband has been instructed to get the firepit going as well as clean the patio grill. Put your man to work, I’d say.
Anyway… maybe we’ll be doing grilled pizza or something. And maybe we’ll make s’mores or something…
We had our corned beef & colcannon dinner earlier this week… and I still have a lot of leftover colcannon in the fridge! Worry not, Fiesta Friends. I know exactly what to do with the leftover colcannon. It’ll be turned into these amazeballs… I mean, amazing Colcannon Balls.
