Happy Good Friday, everyone! Or is it a faux pas to say Happy Good Friday?! It is a day of mourning, after all.
I’m just so happy the weather has finally warmed up so I can bring all the plants crowding my living room outside. And I’m starting my week-long Spring break.
So it IS a happy Friday for me.
And that’s why I’ll be making a happy meal today. No, not THAT happy meal where you get a toy, but this happy meal right here.
Doesn’t that scream happiness on a plate? So colorful, so happy…
But because it’s Good Friday we’re observing the day by going meatless. That’s baked tilapia right there, generously sprinkled with homemade cajun seasoning and then served with cucumber mango salsa.
