Happy Good Friday, everyone! Or is it a faux pas to say Happy Good Friday?! It is a day of mourning, after all.
I’m just so happy the weather has finally warmed up so I can bring all the plants crowding my living room outside. And I’m starting my week-long Spring break.
So it IS a happy Friday for me.
And that’s why I’ll be making a happy meal today. No, not THAT happy meal where you get a toy, but this happy meal right here.
Doesn’t that scream happiness on a plate? So colorful, so happy…
But because it’s Good Friday we’re observing the day by going meatless. That’s baked tilapia right there, generously sprinkled with homemade cajun seasoning and then served with cucumber mango salsa. It’s a light and healthy meal but loaded with explosive flavors. It’s a great meatless meal! If you’re interested, I have the recipe here → Cajun Baked Tilapia with Cucumber Mango Salsa

Thanks for the eggplant feature. The weather is so absolutely amazing now but I still have not taken my plants out. Btw – your arugula seeds from last year are now giving me new greens so forever thankful ?

You’re welcome. I’m still bringing in my plants at night or putting them in the greenhouse. There’s a frost advisory tonight, boo hoo. Remember to not let the arugula go to seed or else it’ll sprout everywhere!

No worries, Jhuls. Same here, I’ve been busy, too. Cleaning and rearranging furniture, redecorating rooms, etc. Also, the gardens need so much work!
