There were so many terrific posts last week that I had such difficulty selecting features! If you didn’t view the linked posts on the last fiesta, I’d suggest that you do so. Pronto!!
I’ve already marked many linked recipes to try, and as soon as the weather cools down, I’ll start one by one. It’s way too hot to even think about cooking right now. And that’s why lately our meals look like this:
That meal I ostentatiously named La Salade Du Jour, but really it was just a big platter of ingredients. It was a convenient way of serving multiple people with varying tastes. Plus, there wasn’t much cooking involved, other than boiling eggs and potatoes, and blanching green beans. Was that smart or what, huh…huh?!

That Ultimate Bloody Mary is such a terrific idea. Once the pandemic is over, I’ll have a party and I will serve something like that. I think a lot of people will enjoy it!

I love the zucchini roll ups! I grow round zucchini this year, probably not the best variety for roll ups, but I can adapt the idea with eggplants maybe?

that is the best salad i have seen in weeks. I am sure a lot of these ingredients are already growing in your backyard. I am waiting to harvest my potatoes for the very first time. love it – bringing my roasted eggplants to the party..

Thanks! Isn’t harvesting potatoes fun? I harvested mine too early and got mostly baby potatoes, but they were so good!
