Fiesta Friday #316

Can’t believe it’s Friday. Again. Time flies, period. Even when you’re not having fun! That’s just me being snarky. I always have fun on Fridays. I don’t have fun only on non-fiesta days.

And if I sound snarky to you this morning it’s only because I’m unhappy with myself that I haven’t shared any recipes at all with you since the beginning of the year.

I have, in fact, baked and cooked several things successfully the past few weeks. But I haven’t always been successful at documenting them. I need to be extra mindful of that. I’ll start immediately this weekend, promise!

But, look, there are recipes abound down below.

Starting With These:

Baby’s 1st Birthday Cake (Healthy & Refined Sugar Free!) from Kat @ The Baking Explorer

“A beautiful cake for a 1-year-old, or someone at any age! I love the icing and decorations, and the fact that it is healthy! A wonderful birthday cake!” — Antonia

Chocolate Covered Sunflower Seed Krispies Bar from Colleen @ Faith, Hope, Love & Luck

“What. I didn’t even know chocolate-covered sunflower seeds existed. Let this be a reminder for me to be more observant next time. Also, I want cookies. These cookies!!” — Angie

Saucy Beef with Broccoli and Carrots from Jhuls @ The Not So Creative Cook

“I absolutely love meals like this, so hearty and full of flavor! The veggies are vibrant, the meat looks tender, and that sauce… just delicious!” — Antonia

Sweet or Spicy Tamarind Treats from Irene @ My Slice Of Mexico

“These little beauties look scrumptious and have such an interesting story. I love learning about new foods like this!” — Antonia

I understand about not documenting things and thus not being able to post. A couple weeks ago I made a delightful Hot and Sour Soup for a Chinese-themed potluck party centered around the Lunar New Year. I kept adding and adjusting, and since I had a time limit before getting on the road, I didn’t record anything. Someday… but that day, I couldn’t even provide anyone with ballpark figures.
