Fiesta Friday #311

Thank goodness for MLK Day! A 3-day weekend is just what I need. Now maybe I’ll have time to sort out and edit my photos, and hopefully, even more time to put together recipe posts. I have a couple of them brewing in my head but haven’t had time to put them down on paper. Or on the World Wide Web.

Time reserved for blogging continues to be elusive for me. I promised myself last year that 2020 would be different. I told myself that 2020 would be the year I can finally organize my time so I can work hard and play equally as hard. I’m still not there.

Fortunately, the year is just starting. I have a whole year to figure out the right balance. In the meantime, let’s keep calm and continue to fiesta.

From last week’s fiesta

Esquites from Irene @ My Slice Of Mexico

“Street food just about anywhere can be awesome. I like the fact this particular one delves into native Mexican ingredients, the discussion provides background, and the dish appears savory as well.” — Diann

“I can’t begin to say how much I love esquites and elotes. I recently had Pull-Apart “Elotes” Milk Bread at some fancy restaurant in Los Angeles that made me wish for fresh corns. And now this! It’s quite a torture looking at Irene’s post. Looking at all the corn pictures made me hangry, lol!” — Angie

Air Fryer Cobbler For One from Lisa @ Life Away From The Office Chair

“One of these dishes that is tipping my balance towards the purchase of an air fryer, this looks tasty as all get out.” — Diann

“I have a new air fryer (a Black Friday purchase) and already I’m loving the convenience and speed. I haven’t tried using it for desserts, though, so I can’t wait to try this cobbler!” — Angie

Cranberry Oat Bars from Ai @ Ai Made It

“I love the sound of these oat bars. I love the sound of anything with oats!” — Angie

Instant Pot Brazilian Feijoada from Mollie @ Frugal Hausfrau

“This sounds like a wonderful stew. And with the tomato salad and collard greens on the side, it makes for a fabulous dinner!” — Angie

I really wish there was a truly authentic Mexican restaurant around here. But New England does seem to lack one of these. Tex-Mex, yes, but a Mexican place with the variety found in Mexico, no.

I’ve been thinking of adding videos for years, but I can’t even find time to edit my photos! I need to retire, lol.

That air fryer cobbler looks like something I need to check out. We got one recently, but I’ve never made dessert in one. Thanks for hosting! I brought by some Ginger Tofu. 🙂 Good luck on your 2020 goals!

My friend told me yesterday to find time everyday for blogging, editing photos and videos, and also for replying to comments (blog & YouTube). I was like “hey, I couldn’t even spend time reading comments, let alone reply.” Oh, well… let’s find time together, Angie. We can do this! Hahaha. I hope you are having a fab weekend! x

That’s the story of my life, too. And I’ve been slacking off lately, mainly because I’ve been sick. But finally starting to feel better today, thankfully. When can you cohost?
