It continues to shock me how quickly we transition from one season to another.
Just a couple of days ago I was enjoying my cucumber watermelon salad, by now a summer staple in the house.
Yesterday I stopped by the grocery store on my way home from work and what did I see? Mums and pumpkins on sale. Well, that made me think of pumpkin bread.
So I bought pumpkin purée.
When I get home from work today, even if it’s still blazing hot out there, I’ll crank up the oven and bake me the pumpkin bread I so crave right now.
There will be no store-bought pumpkin anything for me, if I can help it. I simply can’t abide the spices, specifically the nutmeg. It must be freshly ground, that’s the only way I can tolerate nutmeg. Picky, picky…
Anyway, here’s to weekend baking for me… what are y’all doing this weekend?!

Hi, Angie, thank you for hosting another great Fiesta Friday party! As long as you are asking, this weekend September 15-16, Mexicans all around the world will be commemorating the onset of the Mexican war for Independence. My recipe #3 Red Dough Enchiladas (Enchiladas potosinas) is part of my menu this year featuring Mexico’s national colours: green, white and red. I am also sharing #4 Mexico’s Cry for Independence, with a little history background and the menus and recipes for this and last year. Viva Mexico!

Thanks for letting us know, Irene. In that case, I’ll be making barbacoa this weekend! Btw, Irene, I left you a message on your red enchilada post but for some reason it didn’t show up. I’ve been having trouble with commenting. It’s as if WordPress doesn’t recognize me! It may have gone to your spam folder.

Thanks, Angie and Ai, for featuring the Korean pancake recipe! At some point I will indeed try it with seafood, too. Oh, and Irene, my recipe for the current week also is made for the Mexican Independence celebrations, although I didn’t get a chance to write anything up in specific about it.
Angie says
Yah, definitely try it with seafood, so good!! And you’re welcome ?

Hi, Angie. My weekend was great. I met one of my close friends on Friday. We had an amazing lunch. Well, it was great until I came back home and saw my laundry basket. Do they even get empty?? So you know what happened the next day. 😀
Thank you for hosting Fiesta Friday! Have an amazing week! x
Angie says
Drat, I hate doing laundry myself! Especially the folding. Don’t even mention ironing to me. That’s THE WORST! Other than that, I hope you had a lovely weekend ?
