Fiesta Friday #292

Hard to believe another school year has started and I’m back at work. Going to bed early is so against my night-owl nature, but I have to force myself to do it so I can wake up early the next day.

Discombobulated. That’s one word that comes to mind in describing how I’m feeling. I’m giving myself a few more days to get used to the new schedule. I need to be generous to myself.

In the meantime, this fiesta does not wait. Discombobulated or not, the show must go on, am I right?!

If there’s one thing that I’m committed to, it’s Fiesta Friday. And Fiesta Friday Friends. And Food. And Fun. All the great F-words, yay!

Features (yet another great F-word)

Ukrainian Borscht from Ewa @ Cooking With Ewa

“Oh, Borscht… why don’t I cook and eat more of you… you’re so lovely. Let me make amends, STAT!” — Angie

Superhero Jello from Michelle @ The Scrap Shoppe Blog

“This is such a fantastic idea! I would love to make it for my nieces and nephews.” — Jhuls

Vegan Japanese Cream Stew from Ai @ Ai Made It For You

“Very intrigued about trying this one, despite (or perhaps because of) never having jackfruit before!” — Angie

Mock Hollandaise Sauce from Matt @ Total Feasts

“I am not sure why I haven’t made Hollandaise sauce, but I am sure this recipe is so easy to follow and sounds wonderful as well.” — Jhuls

I know!! I’m so hungry looking at all the food here. I want that borscht and the cream stew, especially since it’s a little chilly today ??

Who’s ready for Cinco de Mayo?! I am! 🙋🏻‍♀️ May I suggest celebrating it with this Pineapple Margarita Chicken Quesadilla? You gotta make that Pineapple Margarita first, though.
