Fiesta Friday #242

Who here loves Brandi Carlile as much as I do?

I go in cycles when it comes to songs. When I fall in love with a song, I would listen to it over and over for days or even weeks, then I’d get tired of it and go thru the same process with another song.

Right now I’m listening to The Joke. If you listen to the lyrics carefully, you might start crying, but not necessarily out of sadness. In fact, I think the song is rather uplifting. It offers encouragement and carries a hopeful message.

Carlile said it is dedicated to all people who “feel underrepresented, unloved or illegal.” It’s just the right song to listen to in the current political climate, which can be downright depressing.

I think it should have won a Grammy or at least be played more often. I’m spreading the word to help, not that I’m being paid or anything like that. I just like it. What songs are you listening to?

Now, take a look at these yummies

Ginger Plum Glazed Eggplants from Patrick @ Looney for Food

“What a wonderful way to serve my favorite vegetable – eggplant! The ginger plum glaze with coconut aminos sounds so delicious!” — Zeba

“Such a nice recipe for eggplants. Love the idea of using ginger plum glaze.” — Debanita

Hot Chocolate Cheesecake (No Bake) from Kat @ The Baking Explorer

“The cheesecake looks perfect with the buttercream frosting & marshmallows on top.” — Debanita

“Hot chocolate served cold? I am in… So pretty and so decadent, just need a spoon to dig in.” — Zeba

Halloween Mocktails for Little Monsters from Jessa @ Sparkle Living

“These mocktails will go nicely with the monster burgers I’m planning to make for my daughter’s annual Halloween party. So adorably ghoulish!” — Angie

Fiesta Mexicana (Pambazo) from Irene @ My Slice Of Mexico

“I loved reading this post and all that history makes this so special. Irene has made this delicious sandwich so special…” — Zeba

I haven’t listened to Brandi Carlile in awhile. I use to love her and went to her concert in Arizona quite a few years back. Thanks for the reminder!

Who’s ready for Cinco de Mayo?! I am! 🙋🏻‍♀️ May I suggest celebrating it with this Pineapple Margarita Chicken Quesadilla? You gotta make that Pineapple Margarita first, though. Coz that’s the marinade for the chicken! As if I need to twist any arms. 🤣 The more margarita, the merrier, says people everywhere. 🍸🥳 Link in bio!
