What a week it has been!
First, it started out cold. Enough to make me want soup. If you follow me on Instagram, then you would have seen the Chicken Lemon Orzo Soup that I made for myself. I said myself because my family actually refused it! Oh well, more soup for me.
Right now, though, we’re having a mini heatwave. I said mini because it’s not actually considered a heatwave. It’s 90 degrees out there. After a long winter, that pretty much feels like a heatwave to me!
Work-wise, I had to finish some online training mandated by the state. It took many hours to complete and at the end of each course, a test was given and if you didn’t pass you’d have to retake it.
Some questions were actually very difficult! It almost felt like they wanted to trick you, the way they were written. I haven’t had to sit for a test like that since college!
Anyway, I’m glad I passed and put it behind me.
Now I can concentrate on the more important things, like this blog and the fiesta! Speaking of fiesta, are you all excited Cinco de Mayo will be here tomorrow?! On a Saturday! It’s a fine excuse to load up on Camarones and Albondigas. Make sure you wash them down with lots of margaritas!

Not sure I like this heat. I bought an ice cream parfait but by the time I got home, it was just some fruit sauce swimming in cream, no ice ?

Thank you so much for featuring my overnight oats recipe! I had an unsuccessful recipe day yesterday so decided to just have a night off and start again this morning, which is why I wasn’t in a fiesta mood last night. I’ve just linked up an old recipe of mine that I feel deserves a bit of attention but I’ll be back later on with my new recipe (hope it turns out ok!).
