Fiesta Friday #222

What a week it has been!

First, it started out cold. Enough to make me want soup. If you follow me on Instagram, then you would have seen the Chicken Lemon Orzo Soup that I made for myself. I said myself because my family actually refused it! Oh well, more soup for me.

Right now, though, we’re having a mini heatwave. I said mini because it’s not actually considered a heatwave. It’s 90 degrees out there. After a long winter, that pretty much feels like a heatwave to me!

Work-wise, I had to finish some online training mandated by the state. It took many hours to complete and at the end of each course, a test was given and if you didn’t pass you’d have to retake it.

Some questions were actually very difficult! It almost felt like they wanted to trick you, the way they were written. I haven’t had to sit for a test like that since college!

Anyway, I’m glad I passed and put it behind me.

Now I can concentrate on the more important things, like this blog and the fiesta! Speaking of fiesta, are you all excited Cinco de Mayo will be here tomorrow?! On a Saturday! It’s a fine excuse to load up on Camarones and Albondigas. Make sure you wash them down with lots of margaritas!

***

Now, features from last week’s fiesta:

Steak and Mushroom Mini Quesadillas from Jas @ All That’s Jas

“I love how simple these quesadillas are, but as you can see the result is fabulous! Sometimes simple is best. And of course, making them mini makes them so irresistible.” — Angie

Creamy Chocolate Fudge Pops from Ramya @ Cooking from Heart

“These fudge pops look so rich and chocolate-y that I wanted to grab one right off of the screen!” — Jenny

Maple Pecan Overnight Oats from Monika @ Everyday Healthy Recipes

“I am a big fan of oats for breakfast, and adding sweet potato gives this breakfast even more nutrition. Plus, the maple pecans sound lovely!” — Jenny

Easy Grilled Chicken Tikka Drumsticks from Shinta @ Caramel Tinted Life

“How good do these look! So much flavor going on here! The key is in the garam masala, and Shinta generously shared her mother’s recipe for it. I will have to give it a try very soon.” — Angie

Now, let’s party! Join Fiesta Friday #222 by adding your link. Don’t forget to link your post to FiestaFriday.net and the co-hosts’ blogs, so we can feature you. Your solo cohost this week is Antonia @ Zoale.com.

If you’re new to Fiesta Friday, please read the guidelines.

If you’re interested in becoming a cohost, please leave me a message.

Thank you for the feature! I can relate to the finicky weather, we are in the middle of a cold patch just when things began warming up, and I cant wait to ditch the coats!

Thanks, Antonia! There were 8 tests altogether. Very tedious! I’m glad I didn’t have to retake any. Thanks so much for cohosting! Feliz Cinco de Mayo! ??

Not sure I like this heat. I bought an ice cream parfait but by the time I got home, it was just some fruit sauce swimming in cream, no ice ?

Congrats on passing your test! I’m also really happy to be back for Cinco de Mayo! Thanks for hosting us! Working part-time at a school has meant I’ve shift over to Instagram for time’s sake. Thanks for keeping up with me there, Angie! And just 3 more weeks until school’s out!

Thanks! I guess we’ve all been reduced to posting random dinners on Instagram ? We have more than three weeks here, we won’t be out til mid June, and the last weeks are usually the longest. C’est la vie ? Great to see you at the fiesta, just in time for Cinco de Mayo.

Thank you so much for featuring my overnight oats recipe! I had an unsuccessful recipe day yesterday so decided to just have a night off and start again this morning, which is why I wasn’t in a fiesta mood last night. I’ve just linked up an old recipe of mine that I feel deserves a bit of attention but I’ll be back later on with my new recipe (hope it turns out ok!). Enjoy your weekend and I hope you get to eat lots of great food!

Aaw…that’s too bad about the failed recipe, but it happens to the best of us. I’ve had numerous myself, especially early in my cooking escapades ? I hope the new recipe is more successful.
