    Thank you SO much for featuring my healthy dessert! Your potato pancakes look gorgeous, pinned! I am surprised at how similar these pancakes are to Polish potato pancakes, almost identical. I’ll come back later with another recipe, which I am really excited about, hope it turns out ok, it’s something I’ve never made before! Have a good weekend:)

      That’s great to know. Isn’t it amazing how certain dishes fro different cuisines can be similar? Take for example, Chinese noodles and wontons and Italian spaghetti and tortellini. Amazing, right?! Have a wonderful weekend, Monika! ?

    I am hoping to post my Irish stew recipe here tomorrow… I want to make it tomorrow since I will bringing it to a potluck tomorrow night. Don’t know all the ingredient amounts until I taste it… At any rate, your potato pancakes look awesome!

      Looking forward to that stew! That’s always a problem, isn’t it? Ideally we want to make and eat the special dishes for special holidays/events on the day, but as food bloggers we’re almost obligated to post them ahead of time. Thanks for the nice words on the boxty!

        My stew was okay, but I was not enough satisfied with it this year to post the recipe for the stew. The meat and veggies were tender and good, but the broth it was in… needs a bit of work. So, nothing for St. Pat’s, alas. Next year…

      I had McD shamrock shake yesterday for my “greens” consumption. Once a year it should be ok, right?! ? One more week for me before spring break starts, can’t wait! I’m hoping to try your cornbread too. Sounds terrific!

      I had a nice day with my family; we got our shamrock shakes from McD ? In the past I usually had a party with my girlfriends but these days I prefer a quiet and relaxing time with family. I must be getting old ? Aren’t those grapes the cutest thing? I’ll be making more for Easter, using different colors.
