Our Fiesta Friday Healthy Recipe Challenge has just ended. Thank you all who participated. Thank you all who planned and tried to participate. Thank you all who didn’t participate. Thank you ALL!
I enjoy saying thank you.
Now comes the extremely difficult task of selecting winners. Why do I keep doing this to myself?! Dear God, please help!
Is it okay if I declare ALL to be winners? That way I don’t have to choose? And we can all share the prizes?
No? I didn’t think it’d fly, either.
Okay, just gimme some time. I’m sure by next week I’ll be able to announce the winners, okay?

Now, Features!
Here are a few things that caught my eye from last week’s fiesta:
Saffron Cream Topped with Salted Caramel Sauce from Linda @ La Petite Paniere
Angel Food Pie from Julie @ Hostess At Heart
Pernil from Mollie @ The Frugal Hausfrau
Black Sesame Shortbread Cookies from Lily @ Little Sweet Baker
Now, let’s party! Join Fiesta Friday #157 by adding your link. Don’t forget to link your post to FiestaFriday.net and the co-hosts’ blogs, so we can feature you. Your co-hosts this week are Andrea @ Cooking with a Wallflower and Su @ Su’s Healthy Living.
If you’re new to Fiesta Friday, please read the guidelines.

Ai @Ai made it for you says
Hi Angie! I have the perfect Japanese saying for you: Otsukaresama deshita. It’s something you say to show appreciation of someone’s hard work after they’re finished?? Thank you so much for organizing the challenge! I would’ve never made stir fry with pineapple if you didn’t challenge us to combine greens with pineapple? The features look great!! Happy Fiesta Friday!!?
Angie says
Oh I love it when I get to learn a new language. I used to know more Japanese. By that I mean just a few words here and there ? Learned from college friends. But you know with languages, you don’t use it you lose it. Thanks for participating, Ai! Happy FF!
Suchitra says
Lovely Features as always Angie! I am looking to co-hosting this Fiesta Friday with Andrea! Happy FF all!
Angie says
Thanks for cohosting, Su! Btw, I added your pineapple couscous to the Challenge. I haven’t even begun to select winners. As far as I’m concerned every entry is on an equal footing right now.
carolinescookingblog says
Somehow I managed to get round to adding my posts to the challenge last week but forgot to add my links to the normal FF. Oh well, have added today and hope to make the rounds later too. I don’t envy you judging the challenge – but it was fun to do, we should do it another time too (although you can hand over judging duties if you like, ha ha!)
Angie says
I thought about asking for volunteer judges, but then they would have to forfeit the eligibility to win, so I decided to go at it alone to give everyone a chance to win. I realize now it was a mistake, lol. Never again! Next time we’ll do this properly, with a panel of judges ??
Lily says
Thanks for the feature. I tried to make a healthy pineapple cake for the challenge but failed miserably. Oh well, better luck next time:)
Angie says
I find that hard to believe, Lily. It was probably not as bad as you thought, but as always, we’re our own worst critics ?
Julie is Hostess At Heart says
Thank you so much for featuring my pie Angie! I’m always humbled by such an honor. There are so many amazing cooks/bakers that visit FF!
Angie says
But you’re our pie queen! You make the best pies!
Monika says
Hi Angie! Have fun picking your favourites for next week!
Angie says
Thanks! Though I’m not sure it’s a fun thing to do ?
Elaine @ foodbod says
Good luck with the judging…really we should all be thanking YOU for challenging us! So many of us, me for sure, would never have experimented with those ingredients together. So a great big THANK YOU, Angie xxx
Suchitra Kamath says
I totally agree with Elaine! If it wasn’t for the challenge I would never have thought of putting together pineapple and greens in one dish! I really had to think out of the box & I am glad I did! Now I have 2 recipes that I made which I know I will make again and again plus so many other healthy ones to choose from! Thank you Angie!!
Angie says
So great to hear, guys!! I just thought it’d be fun, especially in January or after New Year’s when things are a little, shall we say…boring ? So glad you had fun!
Elaine @ foodbod says
Exactly the same here! I was completely stumped initially, and now I’ve found something totally new to use and experiment with 🙂

Missed that challenge! Sorry I havent been around much Angie, things have been a bit crazy! Feels a bit like coming home after a long time away xx
Angie says
And I forgot to tell you, omg! We’ll have more challenges in the future, I promise! I’ve been pretty swamped myself, so I understand. It’s great to have you back! ??

That Saffron Cream Topped with Salted Caramel Sauce from Linda @ La Petite Paniere…it’s one of my favourite from last week! 🙂 Have a good weekend, Angie!
Angie says
Great minds think alike, hehe… Maybe you ought to cohost one of these days. Wanna give it a try?
Ann GrubbsnCritters says
Maybe…maybe…I’m just afraid I’m not able to keep up with the commitment of co-hosting. Although, I”ll definitely reach out when I feel things have eased out a bit. 🙂
Or maybe, as a start, I’ll change my Friday Flavours Feature to FiestaFriday too. 😉
Angie says
Okay, sure… whatever you wanna do is fine with me, girlfriend ?
Ann GrubbsnCritters says
LOL! Have a wonderful weekend, Angie!
lapetitepaniere says
Thank you so much, Ann! Have a nice weekend! 🙂
FrugalHausfrau says
Hi and thanks for featuring my Pernil!! We love it and my sister just made it in the crockpot and said it was amazing so it’s nice to know it’s good that way, too! Now if only we’d had any of those desserts!!
That challenge was a blast, after I stopped whining in my head about it – I seriously loved thinking about it and experimenting and loved the final result, too! Honestly, I felt like I was a better cook after than before…I’m glad I wasn’t on a show like chopped coz it took me a LONG time to wrap my head around that combo, lol! Well, I did think smoothie or salad, but I just had to be different…
Ya’ll have a great day! And try the pernil…:)
Angie says
That Pernil is going to haunt me!! Maybe I should make it next time I get together with my girlfriends. Like, surprise, I’m taking over the Puerto Rican food!! I normally make the crazy unusual stuff. Coz someone has to ??
When I was thinking of the challenge, I did envision Chopped. I was imagining what would they throw at you and what can you make out of them. I didn’t think it was too hard ?
FrugalHausfrau says
You’re too funny, and yes, it WAS hard!! At least it wasn’t the dessert round, haha!!
DetoxMama says
Ack! Angie, I’m back in the blogosphere and how did I miss this! I planned to make today my return to fiesta Friday. So happy to see it’s still going strong 2 years later! How awesome! Ah next time. I have a few ingredient organic dairy free chocolate syrup that tastes EXACTLY like the Hershey’s syrup we all loved as kids – but without all the garbage! ?. Happy Fiesta Friday! Everything here looks delish!!
Angie says
What?! Organic chocolate syrup that tastes like Hershey’s?! You cannot be serious! I need to see to believe ?? It’s so great to have you back. Yeah, we’re still going strong. The FF community is pretty stubborn, lol. In a good way! ?
lapetitepaniere says
Hello Angie, thank you so much for featuring my recipe. What a wonderful surprise this morning and super flattered to be included! All the recipes look delicious!
Have a fab weekend! 🙂
Angie says
You’re welcome! The saffron cream sounds incredible!! ??
Jhuls says
Angie, thank you for the challenge. I know you brought us out of our comfort zones. If not because of the challenge, I would have never made those spinach wraps. I have explored more recipes and thought of making Hawaiian pizza with spinach pizza crust next time. Yay! So, THANK YOU. I enjoyed participating. And oh, goodluck with the judging duties. 😀 Happy FF, Angie. x
Angie says
That’s so great to hear, Jhuls! I’m so glad you enjoyed the challenge. That’s all that matters, right? As long as we’re having fun in the kitchen, I think we’re doing fine ? I don’t know about you, but when cooking becomes a chore to me, I get cranky. That’s when the hubs steps in. No, he doesn’t cook! But he’s very good at taking us out or bringing food home ??
Jhuls says
Yes, you are right, Angie. We should enjoy cooking. But sometimes, it’s nice to pretend that you’re cranky, so someone would take us out. ? Hmm, I think I got an idea for the coming weekends.?
Angie says
Lol, Jhuls! Good luck whatever it is you’re planning ?
Jhuls says
I hope I will succeed ?
petra08 says
The challenge was so great! There was a lot of head scratching I have to admit. I so wanted to enter more recipes but ran out of time! There might be some on the blog later! And I love the features, the black sesame shortbreads looks dreamy good!
I hope your week is going well! xx
Angie says
So glad you enjoyed the challenge, Petra! Btw, will you be cohosting this Friday? Let me know! We’re hunkering down tonight. A snow storm is predicted. The kids will be happy if schools are closed tomorrow but I’m preparing myself for a lot of shoveling ?
petra08 says
Hello Angie
Yes am happy but will join the fun on Saturday and hope this is ok?
Snowstorm? I haven’t seen one for many years! I hope you have plenty of candles and emergency food to have a cosy time! X
Angie says
Thanks, Petra! Yes, Saturday is fine! The storm is here, schools are closed, but to be honest we’ve had worse storms where schools continued to be in session. Maybe it’ll get worse later. I hope not! Anyway, my fridge is fully stocked, as always ? See you Saturday!
