Fiesta Friday #157

Our Fiesta Friday Healthy Recipe Challenge has just ended. Thank you all who participated. Thank you all who planned and tried to participate. Thank you all who didn’t participate. Thank you ALL!

I enjoy saying thank you.

Now comes the extremely difficult task of selecting winners. Why do I keep doing this to myself?! Dear God, please help!


Is it okay if I declare ALL to be winners? That way I don’t have to choose? And we can all share the prizes?

No? I didn’t think it’d fly, either.

Okay, just gimme some time. I’m sure by next week I’ll be able to announce the winners, okay?

Thank you so much for organizing the challenge! I would’ve never made stir fry with pineapple if you didn’t challenge us to combine greens with pineapple? The features look great!!       Oh I love it when I get to learn a new language. I used to know more Japanese. By that I mean just a few words here and there ? Learned from college friends. But you know with languages, you don’t use it you lose it. Thanks for participating, Ai! Happy FF!

    Somehow I managed to get round to adding my posts to the challenge last week but forgot to add my links to the normal FF. Oh well, have added today and hope to make the rounds later too. I don’t envy you judging the challenge – but it was fun to do, we should do it another time too (although you can hand over judging duties if you like, ha ha!)

      I thought about asking for volunteer judges, but then they would have to forfeit the eligibility to win, so I decided to go at it alone to give everyone a chance to win. I realize now it was a mistake, lol. Never again! Next time we’ll do this properly, with a panel of judges ??

      I totally agree with Elaine! If it wasn’t for the challenge I would never have thought of putting together pineapple and greens in one dish! I really had to think out of the box & I am glad I did! Now I have 2 recipes that I made which I know I will make again and again plus so many other healthy ones to choose from! Thank you Angie!!

    Hi and thanks for featuring my Pernil!! We love it and my sister just made it in the crockpot and said it was amazing so it’s nice to know it’s good that way, too! Now if only we’d had any of those desserts!!

    That challenge was a blast, after I stopped whining in my head about it – I seriously loved thinking about it and experimenting and loved the final result, too! Honestly, I felt like I was a better cook after than before…I’m glad I wasn’t on a show like chopped coz it took me a LONG time to wrap my head around that combo, lol! Well, I did think smoothie or salad, but I just had to be different…

      That Pernil is going to haunt me!! Maybe I should make it next time I get together with my girlfriends. Like, surprise, I’m taking over the Puerto Rican food!! I normally make the crazy unusual stuff. Coz someone has to ??

      When I was thinking of the challenge, I did envision Chopped. I was imagining what would they throw at you and what can you make out of them. I didn’t think it was too hard ?

    Ack! Angie, I’m back in the blogosphere and how did I miss this! I planned to make today my return to fiesta Friday. So happy to see it’s still going strong 2 years later! How awesome! Ah next time. I have a few ingredient organic dairy free chocolate syrup that tastes EXACTLY like the Hershey’s syrup we all loved as kids – but without all the garbage! ?. Happy Fiesta Friday! Everything here looks delish!!

    Angie, thank you for the challenge. I know you brought us out of our comfort zones. If not because of the challenge, I would have never made those spinach wraps. I have explored more recipes and thought of making Hawaiian pizza with spinach pizza crust next time. Yay! So, THANK YOU. I enjoyed participating.       That’s so great to hear, Jhuls! I’m so glad you enjoyed the challenge. That’s all that matters, right? As long as we’re having fun in the kitchen, I think we’re doing fine ? I don’t know about you, but when cooking becomes a chore to me, I get cranky. That’s when the hubs steps in. No, he doesn’t cook! But he’s very good at taking us out or bringing food home ??

    The challenge was so great! There was a lot of head scratching I have to admit. I so wanted to enter more recipes but ran out of time! There might be some on the blog later! And I love the features, the black sesame shortbreads looks dreamy good!

          Thanks, Petra! Yes, Saturday is fine! The storm is here, schools are closed, but to be honest we’ve had worse storms where schools continued to be in session. Maybe it’ll get worse later. I hope not! Anyway, my fridge is fully stocked, as always ? See you Saturday!
