Hiya, Fiesta Friends! I hope every one of you had a wonderful Christmas filled with boundless love, immeasurable joy, and, most importantly, fabulous food!
I myself can’t complain. My family and I had a cozy, quiet Christmas, exactly what I expected and wished for. Actually, I do have one little complaint. Our Christmas prime rib roast turned out disappointing. For some reason, the beef smelled and tasted gamey. Skye was happily partaking in the meal, however. Her canine sense of smell didn’t mind the funkiness one bit.
The husband and son noticed the strong smell, too, but they said it didn’t taste that bad. I couldn’t overcome it, though.
Luckily, I also made barbecued seitan ribs for my vegan daughter, so I ended up sharing the vegan meal with her.

My daughter congratulated me for making the most successful homemade seitan thus far. And then, seeing how I hardly touched the prime rib, proceeded to make a smug observation, “Once again, veganism wins the day!” 😂
For dessert, I served something new to our Christmas table. Influenced by the multiple trips we took to the UK this past summer, I made Sticky Toffee Pudding.


I had no idea it was so easy to make! It’s one of those foolproof desserts that a beginner baker would have no trouble executing, IMO. So, it’s definitely a keeper!
