Soup season is here, and what better way to celebrate than with this Creamy Gnocchi Zuppa Toscana.

Arguably, there’s no such thing as soup season, am I right? Soup doesn’t need a season; it’s always the right time for it! I feel the same about salads, by the way.


But the cool fall weather definitely calls for comforting and warming bowls of soup.

This soup is clearly Olive Garden-inspired. On a recent trip there, I felt a bit sorry for the daughter for not being able to order anything other than plain pasta with marinara sauce, she being vegan and all.

Meanwhile, I wasn’t entirely satisfied with the soup choices. Same old, same old… They need an update, am I right?!

Anyway, partly to make it up to the daughter and partly to satisfy myself, I made the above-mentioned Creamy Gnocchi Zuppa Toscana Soup. It’s Chicken Gnocchi and Zuppa Toscana soups combined into one. And I made it vegan, with vegan homemade gnocchi, non-dairy milk, and Tofurky plant-based chick’n. I even added extra protein in the form of cannellini beans. Now that’s what I call a loaded soup!

It was so good that even the non-vegans asked for seconds and thirds!
