Fiesta Friday #589

We’re back to our regularly scheduled programming, folks! In terms of home-cooked meals, that is.

I feel like I haven’t been eating well (read: healthily) over the past few weeks. As you know, travel and celebrations have a way of interfering with healthy eating habits since you’re often at the mercy of what’s available around you.

Now that I’m back in control of my meals, I’m making an effort to fill my plate with plenty of vegetables, healthy grains, and a sensible amount of lean proteins.


Last night, we had sautéed greens (and some purple ones), quinoa, and baked branzino.

It was a simple meal but highly enjoyable. “More, please!” quipped the husband.

    Thank you for featuring my Spinach, Bacon & Cheese baked Rolled Omelet. I love your linky party b/c your ideas on food are similar to mine. I also cut down on gluten as much as possible, if it won’t sacrifice the flavor (and “save” my gluten for dessert!). I’m lactose intolerant, so use plant-based “dairy” as much as possible too, although I’ll make mac & cheese or something similar maybe once a week or so for Hubby (with Lactaid pills as an “appetizer” for me ~ haha). I tell the followers of my daily recipe page to try something new each week ~ and don’t worry if it isn’t “perfect”. Have a beautiful Spring & Summer!

    Hey, hello again. I went down a deep dark hole for the last couple years, but I am back now, and slowly going to add those few recipes I put on my blog over that time, until I catch up with now.
