Fiesta Friday #577

What should we do now that the Super Bowl and Valentine’s Day are behind us? I’m experiencing withdrawal symptoms from all the celebrations.

Luckily Mardi Gras is just around the corner, followed by The next St. Patrick’s Day, hurray!

To keep myself entertained while waiting for these holidays to arrive, and to bring some cheer to these otherwise dreary, cold days, I bought a bag of what the store labels “Fancy Carrots.”

They’re really just rainbow-colored carrots; there’s nothing particularly fancy about them, is there?! I actually find the regular orange carrots to be sweeter and tastier.

But the colorful ones do make for a more interesting snack.

I like to roast them until they’re all shriveled up. They get that jerky-like chew and their sweetness gets concentrated that way.

They would make a fantastic snack for Mardi Gras, too, with all the vibrant colors complementing the occasion. Don’t you think?
