Fiesta Friday #571

It’s dawned on me that for several weeks now, when discussing what I make and eat, I’ve been primarily focusing on vegan dishes. A work friend who follows my blog even asked if I was transitioning to veganism.

Well, the answer is no. I still enjoy eating meat, but it is true that I’ve been trying to incorporate more plant-based meals into my diet.

Partly because I’m starting to really appreciate the taste of plant-based food, but mostly because it’s just much easier for me to cook such meals when my daughter is around since she doesn’t eat meat.


I’m always worried about her feeling deprived especially when she’s away at school so I tend to spoil her when she’s home. Anything she asks for, she gets! I’m referring to food, of course.

So here is last night’s dinner that I prepared for her, but everybody ended up enjoying it quite a bit.

Taiwanese Style Tofu Fried

It’s fried tofu. But not just any fried tofu. It’s double-frozen tofu, torn apart, flavored with five-spice powder, dusted with potato starch, then deep-fried.

It’s not the healthiest way to prepare tofu because of the deep frying part, but it’s definitely the tastiest way!

    Hi, Angie! One of my daughters is vegetarian (some fish sometimes), so like you, I cater to her diet when she visits; that fried tofu sure looks yummy!
