Fiesta Friday #565

Happy Friday, friends! I hope everyone had a wonderful Thanksgiving!

I have no complaints about mine; it was quite nice. I didn’t overdo it this time (in other words, I didn’t cook too much). I roasted a smaller, 16-pounder, turkey.

I chose a smaller turkey knowing that I would be serving a Tofurky along with it.

Tofurky

This was our first experience with Tofurky. While it wasn’t bad, I’m not sure I will make it again. It was a little too salty for my liking.

The highlight of the meal was this Blackberry Cobbler that my son baked.

He made it keto-friendly and vegan, and it was outstanding!

This morning, I’m quite content to stay under the covers. It got a lot colder overnight, so I’m not sure I’m ready to join the family on their Black Friday shopping excursion.

Every year, I come up with different excuses not to go. The truth is, I hate shopping, especially when it’s crowded. It’s even worse when the weather is gray and cold.

Besides, I don’t need anything. My husband, though, always seems to find reasons to upgrade our TV. Last year’s model isn’t smart enough. Oh, boy 😂

Now, let’s look at all this yumminess!

Who’s ready for Cinco de Mayo?! I am! 🙋🏻‍♀️ May I suggest celebrating it with this Pineapple Margarita Chicken Quesadilla? You gotta make that Pineapple Margarita first, though.
