Fiesta Friday #535

Cinco de Mayo can’t come soon enough!! I’m ready for my passion fruit margarita and guacamole en molcajete.

Wish I had a molcajete. I swear guacamole tastes better when made fresh in a molcajete. I went to the city last weekend looking for a molcajete and came back empty-handed. So sad… I guess I’ll have to rely once again on Amazon.


Or I can just go to Plaza Azteca and enjoy their excellent guacamole as much as I want! I haven’t done much cooking or baking or anything in the kitchen, anyway.

The weather is starting to warm up and I’m less interested in spending time in the kitchen and prefer to occupy myself with the garden, instead.

Still, last night I finally willed myself to make this dinner since the husband was getting tired of Panera (How?).

It’s coconut rice with jerk chicken and plantain. It’s an old recipe that’s served me well again and again. I should really bottle up the marinade!

This weekend, though, it’ll be a Mexican fiesta at Casa de Angie!
