Fiesta Friday #524

A lot of feasting is happening this week! February has all the holidays, it seems, squeezed into one week.

It started with the Lunar New Year last Saturday, followed by the Super Bowl (which should be a national holiday, shouldn’t it? Or at least the day after it), then Fat Tuesday, Valentine’s Day, and… the day after Valentine’s Day 😂 There’s always an excuse to overindulge! I’m definitely blaming the husband for this.

Anyway… after all the eating that’s been going on, I’m happy Lent is here! And this year I’m giving up… food and beverage!!

Okay, not all of it, obviously. Or else I’d starve. Just half. And not on weekends. And I’ll still be eating fries and pizzas. And I’ll still be indulging in wine and cocktails. Come to think of it, I’m not sure I’m giving up anything 😂

I do want to resume healthy eating, though. So I’ll be making this tonight.

It’s the Chinese Prosperity Toss Salad aka Yusheng I talked about last week. We had it for the first time last Saturday, and it is a keeper! And it’s perfect for no-meat Fridays.
