Fiesta Friday #518

During the break, I watched TV and YouTube quite a bit, pretty much indiscriminately – comedy, crime, documentary, musical, reality (mostly cooking) shows… any and all genres.

Some shows had me hooked (Good Mythical Morning on YouTube is hilarious!) and many were enlightening and eye-opening.

The two most educational ones, IMO, were Life on Our Planet and You Are What You Eat on Netflix. The latter one had me thinking about changing my everyday diet, i.e., more plant-based is needed.

And that’s why Scrambled Tofu has appeared more than once on our dining table this week. Besides, my daughter is home with us so it’s just convenient all around to have less meat-centered meals.

It’s 100% vegan and my husband ate it with no complaints!

But of course, I had to present it in a tempting way for him. In a taco.

He didn’t even skip a beat! Honestly, after all the toppings which included homemade sauerkraut, he probably didn’t even realize there wasn’t any meat in his tacos, lol.

Now, let’s fiesta! Starting with these!

A Big Bowl of Pho

Black Cherry Yogurt and Granola Pie

Poule Nan Sos (Haitian Chicken in sauce)

Cotton Candy Champagne Cocktail

Who’s ready for Cinco de Mayo?! I am! 🙋🏻‍♀️ May I suggest celebrating it with this Pineapple Margarita Chicken Quesadilla? You gotta make that Pineapple Margarita first, though. Coz that’s the marinade for the chicken! As if I need to twist any arms. 🤣 The more margarita, the merrier, says people everywhere. 🍸🥳 Link in bio!
