Wishing all my Fiesta Friday Friends, wherever you are, a cheerful Christmas and a happy holiday season!

May the holidays bring peace, love, and joy to you and your family!

Last but not least, I hope that Santa brings you everything that you want.


As for myself, as far as I’m concerned, I have everything I need. I have a hard time answering questions about what I want because truly, I don’t need anything.

Except maybe these empanadas.

Over the years, I’ve borrowed and tried many holiday traditions around the world, some more successfully than others.

These Argentine spinach empanadas belong in the successful column and will be on repeat this year. Partly because they’re meatless and easy to make vegan so they satisfy everyone’s dietary needs, but mostly because they’re delicioso!

I make them a little bit differently than the more traditional ones, and my family thinks I should sell them; they’re that good! And that’s why I haven’t shared the recipe.

Just kidding! I don’t keep secret recipes, I just don’t have time to document and record my cooking sometimes. All in due time, people. Eventually, I will share the recipe. It’s not like we’re in dire need of more recipes around here anyway, right?!
