So, did you all have a terrific Thanksgiving? I certainly hope so!
I myself can’t complain. Despite all the trepidation about putting together a vegan Thanksgiving for the first time, I thought it went pretty well.
My family gave me a 10 for the effort, and we all concurred that the result was a solid 9. So, it was very close to being declared smashingly successful, except for one or two side dishes losing a few points due to being veganized. Overall, it was satisfying to see everybody enjoying their Thanksgiving dinner, vegans and non-vegans alike.
Here are some pictures that I hurriedly took.
I’m pretty sure you can tell what’s vegan (the stuffed mock turkey roulade) and what’s not (the turkey). All of the side dishes are vegan! Turns out it’s pretty easy to make these dishes vegan just by subbing ingredients like butter, cream, eggs, and milk with plant-based ones.
Most of the vegan side dishes are here to stay, with the corn pudding and the classic stuffing needing a little tweaking. The best newcomer of the year was given to the vegan chorizo cornbread stuffing. I made that from scratch, including the vegan cornbread!
I will have to post the recipe, but not today. Today I’m finishing the Christmas tree while the husband and kids scour the stores for Black Friday deals.
