It’s Shakshuka time!
Or in this case, it’s really Uova in Purgatorio (Eggs in Purgatory) based on the herbs and seasonings I used. Shakshuka… Uova in Purgatorio… same difference…
In any case, it’s a perfectly easy-to-make, simple meal that satisfies everyone in my family, meat and non-meat eaters alike.
The key is to serve it with a lot of toasted bread, burrata, and most importantly freshly-made pesto.
Almost everything tastes better with the addition of pesto. Like my daughter always says… “Pesto is the Besto!” I should make her a poster!
