Fiesta Friday #493

My big salad platter is getting a lot of use these days, in and outdoors.

This was last night’s dinner.

When the weather is too hot… or you’re still recovering from an illness… and the idea of cooking is too much, a salad platter is the only way to go.

All you have to do is slice some fresh vegetables, boil a few potatoes and eggs, and open a jar of olives… and right there, you have dinner ready!

I can practically eat this way for days. But for the sake of the family, I try to vary the types of vegetables and the dressing and most of the time I offer more than just boiled eggs for protein. Everybody is happy that way.

      I haven’t used my oven at all these past few weeks! I just can’t wait for the cooler weather to get here. The buttermilk pie looks so good
