It’s T-minus 22 working days until the official start of my Summer break. I can hardly wait!
I can only speak for myself, but it’s been a tough year working in a school setting. By that, I don’t mean the job is suddenly beyond my capabilities, but rather it’s become mentally draining.
Let’s just say it’s less fulfilling. I’m not having as much fun as before. And I feel tired when I get home from work.
So, lately, the dinners I serve have been less than stellar. To the point that the husband actually volunteered to pick up food on his way home, unprompted. This will never do… I pride myself on my cooking… I’ll have to try harder…
Maybe I’ll make this tonight.
That’s homemade Banh Mi! I know, right?! I must have had a good night’s sleep that day when I made it. I. Can. Do. It. Again.

I guess when you’re tired you don’t care much about food. You eat just to sustain yourself, so anything will do. But it’s the weekend so I’m getting my cooking mojo back.
