20 something more school days before SUMMER! But who’s counting…uh…??♀️
There’s never been a summer as anticipated as this year, for obvious reasons, most of which Covid-related.
I wonder if I’ll feel safe traveling this summer. I guess it depends on how improved the situation will be by then. So far the news is encouraging.
Last summer we were supposed to travel to New Orleans. Plans were made in the winter but had to be canceled. So that was the first summer that we didn’t travel. So sad…
I hope to go somewhere secluded this year. Away from crowds. So I don’t have to wear my mask. Summer + mask + I ≠ fun, unfortunately.
As I was typing this, the CDC was amending its mask guidelines. Seems we are now free to discard it, both outdoors and indoors. Really?? I’m a little stunned, I have to admit. If it’s true, then it’s time to celebrate!! Right, right?!
Maybe with something like this.
That, ladies and gentlemen, is dessert du jour. Coconut Banana Fritters with Ice Cream. It can potentially masquerade as dinner du jour.

Me, too, Eff ? Plus a bowl of ice cream on the side. That’s my perfect lunch, seriously, lol.

I have three recipes I am trying to enter. Something has gotten screwed up from the PW end of the Link-Thing. I’ll be back as soon as this trash allows me…
Angie says
Oh, sorry to hear. Do you want me to link them for you?
Liz says
Thank you so much for featuring me this week Angie. I am looking forward to cohosting with you. Hang in there, you have less than a month to go. I imagine teaching has been especially challenging these last 14 months. Do you think schools and teaching will ever be the same? Technology has certainly taken a giant leap into our education system.
Angie says
Some of the changes implemented are definitely here to stay, i.e., there won’t be school closing due to inclement weather anymore. The building will close but lessons can still be conducted remotely. I think our students are now more adaptable; it’s one of the few positives of the pandemic. Thanks for cohosting, Liz!! XO
