Fiesta Friday #566

It was a stew-y kind of day yesterday! The cold and dreary weather called for something hot, like the Chili con Carne above. Considering the amount of vegetables I added, though, I could just as well call it Chili con Vegetales. It was excellent served with what my husband calls "the goodie-goodie rice", which is really just an equal mix of brown, white, and cauliflower rice. This is my way of ensuring that my family and I get plenty of vegetables. By blending them with a little bit of meat ... continue reading...

Fiesta Friday #565

Happy Friday, friends! I hope everyone had a wonderful Thanksgiving! I have no complaints about mine; it was quite nice. I didn't overdo it this time (in other words, I didn't cook too much). I roasted a smaller, 16-pounder, turkey. I chose a smaller turkey knowing that I would be serving a Tofurky along with it. This was our first experience with Tofurky. While it wasn’t bad, I’m not sure I will make it again. It was a little too salty for my liking. The highlight of the meal was this ... continue reading...

Fiesta Friday #563

It's two weeks before Thanksgiving, aka the most calorie-laden meal of the year in my household! This is my family’s most anticipated meal. Right now, I'm trying to lose weight so I can put it back on Thanksgiving, haha. I don’t follow a specific diet; I just watch my carb intake. I find it's the easiest way to shed a couple of pounds. These days, I mostly opt for lean proteins and vegetables to fuel my body. I avoid sugary foods and limit bread, pasta, and rice. Of course, it’s easier said ... continue reading...

Fiesta Friday #562

It's been unusually warm this week, it went up into the 80s on Wednesday. It's also been very dry; I don’t think it has rained in over a month, and when it did, it was only a drizzle. Droughts are quite rare in New Jersey, especially ones this severe. A lot of dry leaves and thatch are accumulating on the lawn, so after work, I spend my time outside cleaning, raking, and watering. It’s quite a workout! So lunch is a simple affair. I find guacamole toasts to be the easiest and most ... continue reading...
