It was a stew-y kind of day yesterday! The cold and dreary weather called for something hot, like the Chili con Carne above. Considering the amount of vegetables I added, though, I could just as well call it Chili con Vegetales. It was excellent served with what my husband calls "the goodie-goodie rice", which is really just an equal mix of brown, white, and cauliflower rice. This is my way of ensuring that my family and I get plenty of vegetables. By blending them with a little bit of meat ... continue reading...

Fiesta Friday #565
Happy Friday, friends! I hope everyone had a wonderful Thanksgiving! I have no complaints about mine; it was quite nice. I didn't overdo it this time (in other words, I didn't cook too much). I roasted a smaller, 16-pounder, turkey. I chose a smaller turkey knowing that I would be serving a Tofurky along with it. This was our first experience with Tofurky. While it wasn’t bad, I’m not sure I will make it again. It was a little too salty for my liking. The highlight of the meal was this ... continue reading...
Fiesta Friday #564
The menu for my family’s Thanksgiving meal is essentially set in stone. I've been cooking the same roasted turkey along with the traditional side dishes for as long as I’ve been married! Okay, maybe not that long, but it's been long enough. So you can understand that occasionally, I want to branch out and try to add something new to our Thanksgiving meal. Right now, I'm trying to lose weight so I can put it back on Thanksgiving, haha. I don’t follow a specific diet; I just watch my carb intake. I find it's the easiest way to shed a couple of pounds. These days, I mostly opt for lean proteins and vegetables to fuel my body. I avoid sugary foods and limit bread, pasta, and rice. Of course, it’s easier said ... continue reading...
Fiesta Friday #562

Droughts are quite rare in New Jersey, especially ones this severe. A lot of dry leaves and thatch are accumulating on the lawn, so after work, I spend my time outside cleaning, raking, and watering. It’s quite a workout! So lunch is a simple affair. I find guacamole toasts to be the easiest and most ... continue reading...
