Happy Fiesta Friday, everyone! Once again we've decided to go away for the weekend so we had our Easter ham early. It was going to be a low-key affair for just the husband and me, anyway, so it was a simple meal of baked ham with roasted baby potatoes. Happy early St. Patrick’s Day, Fiesta friends! Our annual corned beef & colcannon meal came early this year. We had it last night since we’ll be away on a mini adventure this weekend. We want to check out the American Dream Mall/Amusement Park. And because the decision was made rather hastily and quickly, we were unable to get our trusted pet/house sitter to watch Skye on such short notice. So she's coming with! Fridays are for pizza. And today's pizza is not from a pizzeria. It's going to be homemade, and it's green… uh oh… Is anybody up for a green pizza? I am!
