Hello, Fiesta Friends! I hope wherever you are, you're enjoying good weather. I wish I can say the same about my neck of the woods. We're experiencing a little bit of a heat wave currently. Or should I say, a lot. As I was driving around yesterday, my dashboard was showing that the outside temperature was 100°! That, coupled with the high humidity, made the day positively unbearable. I couldn't even think of what to eat for dinner, let alone cook for one! Luckily, I always have some grilled ... continue reading...

Fiesta Friday #500
IT'S #500, YOU GUYS!! OH MY GAWD!! I feel like we should have done something special to celebrate the milestone, but as always I'm completely disorganized and totally absent-minded that I forgot all about it until I'm writing this right now. The old-timers here would remember we used to mark the centennial anniversaries with special-themed fiestas. Those were the good ol' days, sigh... Maybe we can do a special fiesta one of these days?! If you have any ideas, I'm all ears. In the meantime, ... continue reading...

To think that they all started with one innocent little plug given by a friend. The resulting pesto is very good, by the way. It has ... continue reading...

It's a McDonald's day... Not! We do actually patronize McDonald's every now and then, but this meal is not from them. Because first of all it's homemade... using vegan meat! So instead I should have said... It's a MockDonald's day! The MockNuggets are made with seitan and the burgers are made with Beyond Burger patties. I'm pretty satisfied with the way the "chik'n" nuggets turned out, but of course there is room for improvement. They're passable for now since I saw the daughter munching ... continue reading...
Fiesta Friday #497
It's Shakshuka time! Or in this case, it's really Uova in Purgatorio (Eggs in Purgatory) based on the herbs and seasonings I used. Shakshuka... Uova in Purgatorio... same difference... In any case, it's a perfectly easy-to-make, simple meal that satisfies everyone in my family, meat and non-meat eaters alike. The key is to serve it with a lot of toasted bread, burrata, and most importantly freshly-made pesto. Almost everything tastes better with the addition of pesto. Like my daughter ... continue reading...
