As part of my ongoing quest to eat healthier, besides adding more plant-based meals, I've also been trying to incorporate more fish into my diet. I'm so looking forward to next week when January will finally be over. It's always the toughest month to get through, don't you agree? Here’s a great dish that both vegans and non-vegans would go crazy for. I know because my daughter, who is vegan, and I, non-vegan, both LOVE it! It's kimchi fried rice, of course. So flavorful you won't miss the meat or eggs typically added to fried rice. There was a rather lengthy power outage in my neck of the woods, due to a storm, so now there are things in the house that need to be cleaned up and re-organized, i.e., freezers and refrigerators. Yes, multiples. And outdoors, the greenhouse flipped over! But my husband and son have managed to get that fixed. During the break, I watched TV and YouTube quite a bit, pretty much indiscriminately - comedy, crime, documentary, musical, reality (mostly cooking) shows… any and all genres. Some shows had me hooked (Good Mythical Morning on YouTube is hilarious!) and many were enlightening and eye-opening. The two most educational ones, IMO, were Life on Our Planet and You Are What You Eat on Netflix. The latter one had me thinking about changing my everyday diet, i.e., more plant-based is needed.
