Yesterday felt like a soup day for me, even though, according to my husband, it was humid and muggy outside. I wouldn't really know, as I was kept indoors with the AC running at full blast. I craved soup because I was battling nasal congestion and a scratchy throat. This time of year, I always seem to catch a cold. After several mishaps, such as growing the wrong type or not growing enough, I finally harvested enough Thai Holy Basil yesterday to replicate an authentic Pad Gaprao I once tasted in Bangkok. Chicken Pad Gaprao with Fried Egg Pad Gaprao, which translates to Stir-fry with Holy Basil, and hence the importance of holy basil as an ingredient, is so popular in Thailand that it's considered a national dish.
