The end of the school year is fast approaching, but somehow things just keep getting busier for me. Preparations for upcoming travel plans become front and center in my daily routine. It'll be the first time in 3 years that I travel by plane, or have a need for a passport. Gosh, I definitely feel a little apprehensive! Feliz Cinco de Mayo! In honor of the special day, I'll be serving Mexican food tonight. Most likely Barbacoa. Though it seems we have Barbacoa at least every other week, but who's complaining?! Every time I see jumbo shrimp on sale, I feel compelled to buy. Because. Jumbo. Shrimp. Major mass appeals there, right?! Consequently, there are now several packages of jumbo shrimp in the freezer.
